A glance in the drawer where the bread is kept revealed no bread for a nice piece of hot toast smeared with apricot jam. Since it was getting kind of late I decided it might be just the day for some vanilla and buttermilk waffles.
Checking through the list of ingredients and peering in the pantry I discovered no white sugar and not enough flour. So I sent my darling husband Kit off to the supermarket with a list.
The trip to the local supermarket is a short one and he was soon home brandishing a bag full of groceries saying ” Look what I found to put in the waffles!”. I held my breath for a moment, thinking ” hazelnuts or maybe blueberries?”. He held up a bag of M&M baking bits with a satisfied smile.
For those of you that have not seen these (I fell into this category until this morning) they are like miniature M&M’s.

So, I duly started the waffles knowing that my idea of a sophisticated vanilla buttermilk waffle maybe with blueberries scattered through, oozing with purple juice, had just been dropped to the floor with a resounding “splat”.
I ended up making a batch of waffles with M&M’s scattered over the top of the surface of the waffle, which seemed to melt into a mix of chocolate and food colouring.
I was so distracted by the anticipated blueberries turning into M&M baking bits, I accidentally used my buttermilk pancake recipe to make the waffle mix. However, I am pleased to say that it made very good waffles!
With happy smiles around - there is not a single waffle left.
White Trash Waffles
- 2 cups of flour
- 1 tspn baking powder
- 1/4 tspn salt
- 2 large eggs separated
- 2 1/4 cups of buttermilk (or yoghurt)
- 3 Tblspns butter - melted
- 1 tspn Vanilla extract
- 1 packet of M&M Baking Bits
Mix the dry ingredients together in a bowl
Add in the buttermilk, egg yolks, vanilla and melted butter
Whisk the egg whites in a separate bowl and fold in gently to the waffle batter.
Place roughly 1/2 cup of waffle batter into the hot greased waffle iron and scatter some M&M’s over the top, these will melt as the waffle cooks. Scatter with a few additional M&M’s, drizzle with maple syrup and serve hot.
Waffles are best served as they are made and not left to sit around.
